Not sure about Chinese food but I like the Salty Iguana. It's a Mexican restaurant. It's fairly close to Bass Pro Shop in the Independence area.

In Lees Summit you might try Thai Spice at 1192 NE Douglas St and Mali Thai Bistro at 579 SE Melody Lane. I love the Chicken Pad Thai, you can get it med or spicy or with Shrimp.
