In Texas, BBQ is a religion, like football. People have been known to resort to violence if somebody trashes their favorite BBQ joint.
Back in the late 80’s, Stubbs was on the northbound lower level of I35. After a health inspection they were given a list of things to change. They couldn’t afford the changes so they closed which became front page news. John Kelso wrote that he “wouldn’t eat in a BBQ joint that could pass an inspection”.
Oh, the Salt Lick doesn’t suck. It’s the best BBQ in Texas and since Texas has the best BBQ in the country, Salt Lick is the #1 BBQ joint in the country.

I heard it was. I need to eat downtown more often. But there seems to be too many new yuppie joints opening up where the description of the cuisine ends in "fusion."
May be pretty. May be expensive. But it AIN'T TEXAS!

I went to Franklin BBQ this past weekend. Got there just after 11am, when they open, the line was out the door and to the end of the building. Was in line 90 minutes til I finally got to be served. Got some of everything to go, brisket, sausage, pulled pork and pork ribs. The pulled pork, ribs and sausage were all very good but the brisket was excellent! As good as I have had anywhere even Lockhardt, thick sliced, tender and flavorful. I really liked the variety of sauces as well.
Next time I go I will get there earlier.
They are open Tuesday thru Sunday, closed Monday 11am til they sell out.

That place on IH35 was the second place that Stubbs sold BBQ out of in Austin after he left Lubbock. The first was Antone's blues club on Guadalupe.
Salt Lick is probably the best Mississippi style BBQ place in Texas owned by a Japanese woman. I'll grant you that. I ate at the one in RR a couple of years ago and the ribs came out plated in a pool of grease. I don't know how anything could be that greasy off of the pit. I think there was some oven time involved. Won't be back.
Went to Coopers in New Braunfels this weekend past. Overpriced for remarkably average BBQ.
Can't wait to try Franklin BBQ with all the quality recommendations on here. Sounds like a winner, gonna have to make some time.

Went to Smokey Mo's in Round Rock for lunch-
Never. Again.
After I placed my order I set my empty tray at the table and went to get my tea. As I'm standing there I sense someone standing next to me. It was the guy that had taken my order, and he hands me my plate AS I'M TRYING TO FILL MY TEA GLASS!!
Oh yeah, the brisket was dry, the ribs were greasy, and the TVs were showing the Rachel Ray show. At least the BBQ sauce wasn't half bad.

Had some Q from Sonny Bryan's Smokehouse in Dallas the other day.
Pretty, pretty, pretty good!
Will get to H-town next week and hit Goode Co. Perhaps...

Goode Co. (Houston) has well-executed meat, but the sauce isn't so good, imo. Sauces and taste for sauces varies quite a bit, though. Houston is Q-challenged relative to the Luling/Lockhart/Austin/Llano golden crescent.
I find the pork chops and ribs at Cooper's in Llano to be top notch.
I think I will take a day off soon, drive to Austin, eat at Franklin's, bang an Austin provider, and hang out at P10.

What is there besides meat Northwood? I love Goode Co's. smoked duck and Czech sausage. Don't really think much about the sauce. I only use it when the meat sucks or is too dry.
Is Dozier's in Fulshear still knocking 'em dead? Pecan smoked BBQ. Used to be one of my faves!
Actually, if memory serves me, the Pappas family does a pretty decent job.
