I certainly hope that you make it to Nebraska. I would definitely raise my hand to be a one-hour host to my fair city, Lincoln ;-).
As for what to do, Lincoln does suffer a bit from chain restaurants but if you look hard enough you can find some gems. Sultan's Kite and Ali Babba's (both family-owned) provide wonderful "Greek" dishes. If you are headed downtown and want a mix of beer, pizza, and atmosphere, you can try Yia-Yia's.
If sushi is your thing head downtown and try Shokunin. I love Blue and Hiro but again, I believe that this is a fun and family-owned sushi restaurant.
As for beer, if you are downtown you are close to Boiler. I like their beer and I love the atmosphere of their location. Plus, Boiler makes some interesting beers.
I should also add Code Beer (just south of O St on Antelope Parkway).
Anyway, if you make it to Lincoln I would love to spend some time with you discussing the fun things that people can do in Lincoln.
