Your best bet are the stripper bars in Cabo San Lucas. There are a ton of them, and the classier ones aren't cheap, maybe $300 to $500 for both the woman and the room. Cabaret on Lazaro Cardenas across from McDonalds is a good choice that's got some reasonably good looking women with an all in cost of around $200. If you're somewhat adventurous, once at Cabaret, walk north on Calle Francisco Villa, and you'll find some dive bars with cheaper prices, as well as Copa. Copa has some of the same women as Cabaret, they rotate back and forth, and you'll pay as much as 50% less there if you pay in pesos.

As far as escorts from websites, good luck, I don't think it's a good area for that. If you click with someone at a club and can communicate with her, there's a good chance you'll be able to get her to visit your hotel if you agree to pay for the transportation.
