It is difficult to give absolute answers on this kind of thing, but in general, I don't believe LE takes that much time and effort to set some one up. Meeting you for lunch is a bit of an effort on their part to find you, make arrangements, meet you there, etc.... This is a lot of time and LE wants to make arrests quickly -- it keeps their productivity higher like any business.
That is not to say it could never happen (especially if there were some reason they were interested in a particular lady to go through this effort) -- but it seems less likely.
Instead, it would easier and faster to simply arrange a bust the regular way and meet you directly. They will get more arrests more quickly -- LE looks at their numbers like everyone else.
Of course, all of you should take typical precautions when meeting someone, such as knowing what to say, what not to say (ex: avoiding explicit language), how to handle your self at a meeting, etc. LE often uses recordings to provide proof, so keep that in mind -- what you are saying and doing is on record and that will be used against you. There is a lot of more of these kinds of precautions you can learn about, but I think you get the idea.
That includes using good common sense. If you get a bad feeling about someone or a situation, it's better to pass it up and get out of the situation. Trust your instincts here. If you follow these guidelines, you should feel comfortable.
