Jalapeños are mild compared to cayenne. On the scoville scale Jalapenos are 2500 to 8000 while Cayenne are 30,000 to 50,000.
In Thailand, they have their own "Thai Peppers" which are hotter than cayenne peppers (50,000 to 100,000). I've watched them steam them in a wok and then chop them up and mix in a little vinegar to make a paste. They scoop it up with cabbage like we would salsa at a Mexican restaurant. One of my Army buddies tried it. He told me it was like a "mouthful of Red Devil Lye".
