Hope I am not to late...
NEVER FRY IN THE GARAGE!
#1 put the turkey in the "pot" and fill with water,
remove the turkey and mark the water line so you will know how much oil to use as you fill close to the the previous water line.
#2 any frozen water in the bird will cause a flash and could result oil spilling over and catching fire... thaw thaw thaw and still be careful.
#3 slowly lower the bird in and make sure your hooks are secure, have a back up plan and help if it is a heavy bird.
#4 keep an eye on your propane
#5 have a plan of escape
