Got a good 4th of July recipe?
Here's one! Of course, it's good all year 'round...
UNCLE YEESH'S HOMEMADE CHILI
1lb coarse (chili) ground beef
1lb fine diced beef cubes
2 pkg HEB Texas Chili seasoning
1 28oz can whole tomatoes
1 8oz can tomato paste
1 small can tomato paste
1 large yellow onion, chopped
1 clove elephant garlic, fine grated
1 Anaheim (Hatch) pepper, fine diced
1 fresh red Jalapeno pepper, cut in half lengthwise and seeded
1 fresh green Jalapeno pepper, cut in half lengthwise and seeded
1 tbsp green Tabasco sauce
1 tbsp brown sugar
1/2 cup water
1 14oz can red kidney beans (OPTIONAL)
Grated sharp Cheddar cheese
Tortilla and/or corn chips
Cut up onion and set aside. Take a cheese grater and, using the small (fine) side, grate the garlic until it becomes a mash and set aside.
Prepare the peppers and set aside.
In a large skillet or Dutch oven, brown the ground beef and beef cubes. Drain fat, return meat to skillet and add garlic mash and HEB seasoning. Saute on medium-high for 3 minutes, stirring often. remove from heat.
Open the tomatoes and break up in a bowl. Add the tomato sauce and paste and blend together. Add to beef and stir.
Add the onion and Anaheim pepper and stir. Gently stir in Jalapeno halves, add water, cover and simmer on low for 2 hours, stirring every 15-20 min.
After 2 hours, add the Tabasco and brown sugar. Add the beans (IF DESIRED) and stir. For less spice, remove the Jalapeno halves and discard. Otherwise, remove the Jalapenos, fine chop, and return to the chili. Cover and simmer an additional hour.
Serve with cheese and chips.
