I smoked mine Saturday. Last couple years, I cut the bird apart before brining, toss, make stock or feed back, guts etc to dogs. Remove wings, leg quarters from breast.
Wings are out of smoker first. Then the breast (to 150) then leg quarters out last.
Much more consistent results than smoking the whole bird.
