Apparently you've never had fresh, wild caught Pacific King (Chinook) Salmon.

Shit, it is easy to see why ya'll need mods from the South.
Cornmeal fried catfish is the only way to go.

Catfish is 3rd, and actually what I cook most. Salmon pretty much sucks in my opinion, like trout, except for salmon patties made by someone who knows what the fuck they're doing. My favorite fishy tasting fish is perch, and red snapper.

Since I haven't tried Walleye yet, I have to agree with this remark right here.
Although I do love a nicely broiled Golden trout.

Are you one of those numnuts that goes out the 1st day of trout season? I used to be, always had a great time at Indian creek and Laurel Hill creek. Many, many nice palominos in Laurel Hill creek, big fuckers too. You're just west of me, any good streams near you?

I caught a 24" golden trout on opening day on Standing Stone creek in Huntington Pa by State College 30yrs ago.The local paper took my picture with it. I had it mounted. My wife hated it. I heard the Goldens are to oily to eat. Really like albino carp. I don't really like to eat trout. Too boney. I prefer pâté. With a fine Chiante.

I prefer Walleye, breaded and baked. With a good beer and home fries.

I haven't done much stream fishing since I moved down here, and to be honest when I want to hit the streams, I go either north or your neck of the woods.
I've been checking out a lot of lakes this year since I have a boat to use.
And I've only fallen off once so far.
And no, I do not do the first day of trout season, ever.
I like quiet peaceful streams when I fish. Not parade lines.
Oh and Bam,
If you broil a trout right all those bones will slide right out in a full skeleton just like in the cartoons.

I like what I like. I prefer smoked trout. Just pull the meat off and dip it. Horsey sauce would be a great choice. Trout pâté is the bomb too.

Smoked trout is good too. I just prefer it broiled.
I've never had any type of fish pate.
Just doesn't sound right..
Willing to give it a try though.
Hell, I'll try almost anything once.

Bam and Jinny, try Laurel Hill Creek, Jinny just sit on a big rock in the middle of the stream and spin Joe's flies, black gnats or brown hackles. Bam use you fly pole with Mike's GLO salmon eggs.
