Census categories are nonsensical and really done for whatever statistical purpose they consider relevant. Not even all Arabs are middle eastern - ask a Tunisian or a Moroccan.
In terms of Asian the census treats calls asians separate from asian indians which is something that makes no sense to anyone anywhere in the world apart from the US. And even I am not sure if a Pakistani or Nepalese is Asian Indian or Asian or something else.
If one classifies by recognized continents the choices are: North America, South America, Europe, Africa, Asia, Australia & Antartica.
If one classifies by ethnicity Asian is not a choice. A Russian Asian could be white, a Chinese would be probably what one would consider oriental (if one agrees that that is an ethnicity), South Asians don't really have a term apart from maybe saying brown. Though that is also not uniform. A New Guinean would probably be considered Aboriginal or Islander or some such term.
This is not being pedantic - many immigrants genuinely will not understand if you make a list and say everything else. Especially if it includes both ethnicities like caucasian and geographies like Asian. As someone said it is easier to just say who is excluded. I often look at a list and am not sure where I stand on it.
