IMO, the real reason that you hear one thing in person and another in a review is fear of confrontation. It's the same reason that people will tell a restaurant server that everything was fine, then complain to their friends. When I was in restaurant management, it was believed that for every single complaint we received from a customer there were nine more with the same issue that didn't speak up. In management, I've had to tell people that their work was substandard, discipline employees and fire them sometimes. It's never pleasant.
