The breading is flour.

You put a breaded cut of meat in oil that's in the pan and the pan doesn't get hot enough to bring the oil to 375 degrees first, the flour will break off and separate from the meat and at the same time whatever remaining flour is still left on the meat will absorb the oil and it get soggy because flour is also porous.

If the oil is hot enough, then the flour will begin to fry up to a crisp immediately as soon as it touches the hot oil.

That's why the best way to prepare any food that is breaded with flour and the breading is required to be cooked to a crisp is to use a deep fryer, including the electric portable ones that you can buy at Walmart.

Yes, I know how to cook and I can prepare several different cuisines but I find easier and less time consuming and more economical to just dine out.

I have to second this recommendation. The Ranchman Café in Ponder is an absolute must and hands down to best "Texas style" chicken friend steak I have ever had. True pan fry not deep fried. They opened their doors in the 1950s and have been a staple ever since. As mentioned they have hommade pies and cobblers made each morning. Everything is farm to table fresh as they have their own in house butcher who has been there close to 30 years. They have a garden in the back where they grow their own okra, tomatoes etc. Their fried green tomatoes and fried okra is literally picked fresh when you order it.

Give this place a try, I assure you it will change your life!!

The Ranchman Café in Ponder

lots of recent one to three stars reviews saying it's not good especially the steaks and chops and even the sides were not good: how do you mess up rice?

I think they have fallen under the same affliction many restaurants that get good word of mouth over the years fall under:

they just stopped trying - after all, 1000 people will still show up even if 10 of them says they had a bad experienced, the other 990 won't say anything good or otherwise, they still have made moneyand 1000 other people will show up next week.
