The speed for making the m-rna based vaccines had nothing to due with the bat cave. m-rna molecules are easier to make than a specific protein needed for a traditional vaccine.

Safety: Unlike live-attenuated or viral-vectored vaccines, mRNA is non-infectious and poses no concern for DNA integration—mainly because it cannot enter the nucleus which contains DNA. Other strategies such as protein-based or inactivated vaccines also require chemicals and cell cultures to produce. mRNA is made through a cell-independent process and does not require inactivation; thus, it poses no safety concerns due to contamination with toxic agents.

A big question (to me at least) is if mRNA technology has existed for 30 years and was "safe", why hasn't it been used for a mass-produced vaccine until now?

Moderna, one of the pioneers of mRNA techonology was founded in 2010. How did you come up with the technology has existed for 30 years?
With the Sars Cov2 virus the spike protein portion of the virus controls its physical characteristics. The version that reached the USA in Feb 2020 had the ability or a strong affinity to react with a certain protein found in lung and other cells of the nasal pathway. How the this protein was formed remains a mystery. Most think it evolved. The conspiracy theorists believed in was made in the Wuhan lab.
Neutralize the spike protein of SARS Cov2 and you neutralize the virus (you won't get terribly sick and die). That is what the m-rna vaccine does, it has the instructions to make the antibody (another protein) to neutralize spike protein.
They knew what mRNA was 30 years ago, they were not close to making a vaccine with it until Moderna was formed.

I don't think there is anything unusual about the progress that Moderna has made since 2010. Why are the M-RNA vaccines easier to make than a traditional vaccine. With a traditional vaccine you have to grow the virus which takes time before you can deactivate it and put into peoples arms. M-RNA molecules don't take as much time to produce them. Once the amino acid sequence of the spike protein is determined, the M-RNA molecules can be made.

To develop the COVID vaccine, Pfizer teamed up with Biontech, a German company which like Moderna has focused on therapeutic mRNA's.
