Any escort who screens is aware of this. On one hand it's good - the deeper screening the less trouble you'll face (probably why these studios ask for IDs and real world info), on the other hand, you lose some people at this step. So adding a whole different messaging app is likely not feasible.
Although, truthfully, all of use should be using at the least telegram or signal.

Yeah, you’re right. The barrier to entry is already pretty high as is. Adding more responsibilities for the customer would significantly increase business friction.
However, depending on the level of privacy someone expects, using a dedicated app might be a much easier option.
For example, a privacy-conscious person might use a phone number purchased with cash on a separate device with a distinct online account (Google or Apple) solely for this purpose. This approach is considerably more involved than simply downloading an app and creating a new account on that app.
I guess a lot of people are just using their personal phones and personal numbers
