I don't think "cold feet" is going to be the likely scenario. If a man cancels before there's physical contact, then that probably means one of three things:
1. Something came up such as a family or work matter
2. He lost his sex drive / interest, which he initially had at the time he scheduled the appointment.
3. He never took the appointment seriously to begin with, or was just looking to bully a provider by wasting her time.
No after physical contact there can be a slew of reasons, such as pictures not matching the woman or questionable incall location, etc... But to imply cold feet beforehand, that means the guy chickened out and got scared. The only reason I see that happening is if he made the appointment too quickly, did some additional research on the woman after making the appointment, then found out some things he didn't like, such as unfavorable reviews, etc...
