I have been on short vacations, like 3 or 4 day weekends, with Providers.
But not at an hourly rate. I an offer for the trip, day rate and expectations.
I have never been turned down, except once, the lady had kids without anyone she trusted to take care of them, but she really wanted to go. I saw her for 2 years when I was in Houston. We were tight, but at least she was family oriented enough to not push her kids off on someone she didn't know or trust.
Trip included airfare, food, drinks, everything like a normal vacation.
None of these trips have been cruises.

I have been on 15 cruises and river trips many in Europe and always with my SO. Never on a Carnival cruise (The Barf Boat) However thats a good cruise line to meet other singles. You will not meet singles on upper scale cruise lines, just married seniors.
Things I would be concerned about in taking a provider. You better know her well because you are going to be in extremely close contact the entire trip. You are likely going to have to know each others RW names for airline tickets and passports when booking. Remember your room key acts as a credit card also. If you put her on your account theres nothing stopping her from hitting a jewelry store with the ship account. I advise you make her register on board with her own credit card.
If she looks young enough to be your daughter take into account that ship dining often means being coupled with strangers at dining tables.
Even a 3-4 day Caribbean cruise will set you back 3-5K. depending on type of room. Add that to what she might expect for her company. Remember theres also the cost of excursions. Good luck I would never consider it even if single.

I’ll try to answer the OP. Some cruise lines cater to singles. How you would succeed at hosting with lots of single guys and girls. Only you can decide where you fit in.
Those cruises also cater to young families. How do you feel about 300 unattended kids running around pushing the elevator buttons and screaming.
Key West is just as nice and you can avoid much of the above.

I will tell you, I think it is way more likely that a pissed off girlfriend with charge up your account than a pro, LOL. Plus, you definitely need to know each others' names when traveling especially internationally. You need to have an emergency plan as well. What is she falls ill or you have a heart attack? This is serious stuff that should not be done with someone you don't know and trust.
Regarding the ship account - if you are really concerned, have her sign something stating the limits of what you will pay for. Put making her pay for her own random incidentals and drinks is TACKY. I think you can limit your kids' spending, I am sure you can do the same with a companion.
The age gap thing isn't unusual as long as you know each other and have a story. My civie dates are older than my hobby ones. The hobby ones are way cuter...

I have talked those over with ANY lady I have become close with. Even if it is just a weekend, or even an overnight. They know my full name, and where to get pertinent medical info, and at a minimum I ask for a name/phone number of someone who knows her and I can reach in an emergency.
I have been in a situation where I had to call 911 and ride the ambulance to the ER with my ATF after she had a stroke at 2 AM in our hotel room. Seriously scary stuff mostly because I didn't have some of the info the doctors wanted to know, and she was unconscious. I knew just enough that with some dumb luck I was able to find kin and things turned out OK. It very easily could have turned out very wrong for her.
Obviously this doesn't work early in a hobbying relationship, but by the time you know real names and are comfortable spending a weekend together, PLEASE strongly consider in advance how you will deal with it--and I hope you never have to.

And I'm gonna echo Old-T.
The top three gals on my dancecard know my rw stuff. Two have even met local family members (of course there's a solid cover story). And there's a 4th back in my old stomping grounds as well. Trust is an interesting concept and once earned, it can be well placed, it works well, and is the only way a long term thing can survive.
Last, the trust thing must go both ways or it's a fail.

I usually have my own room to myself and I don't share so that's nice. When I am in certain areas of the ship(bars, casino, swimming pools) I do get hit on a lot by married, single, soon-to-be-divorced men & the occasional older gay woman who wants to try a chance with me lol. So, quite a melting pot....but I never cross the line because of the chance my family or friends might find out...but this is something that has intrigued me. I know most of the cruises are filled with married individuals not singles. Which is fine with me. With talking to many bartenders and other personnel on the ship, they have told me that they have girls(international) of course that help men with their "certain needs" at a cost of course. Which this doesn't suprise me at all, because of how little they get paid. But this true of all cruise ship lines.
On a different subject, if a gentlemen friend of mine wants to pay my way on a cruise, then yes this woulnd't be cheap. Especially if this is a 7day cruise, not including the airfare, hotel stays, expenses on board, shore excursions, shopping, spa, etc...
Of course, I would have to get along with my gentlemen friend before I would ever consider such an excursion.

Looking at some of the swinger sites you will see people post that they are going to be going to be going on a certain cruise and are interested in finding playmates on the same cruise. You don't see a lot of replies, but I know there were two other couples on a cruise my SO and I were on once. I wonder if a provider were to post on ECCIE or the like that they were going to be on a certain cruise what kind of response they would get. There are also those destination vacations that provide providers for singles and or couples. I'm surprised that some of those don't have some sort of arrangements for those ladies, and the rates are something closer to most people's budgets. As far as the extra charges, you can put down a cash amount on a card as a limit to protect yourself from someone deciding to buy something crazy from one of the ships stores.

It also just struck me that there is a guy called Super Mario who lives on Royal Cruise ships and has for a decade or so. They love to talk about him and you can google him if you're curious. One couple on a cruise kept going on about him and the different women who are on cruises on him. As soon as I heard it I knew that he was hiring providers as company. He's loaded, so I guess the cost isn't that big of a deal to him.

I have 3 ladies with whom I have a long term hobby relationship and have gotten to know them well enough that a week together on a cruise would be a real pleasure. I have much in common with each of them, know a great deal about their RL and have moved into a client/friend space. To me, that is what would be necessary for a week together to be successful. With one of them, I am not sure she would want anything more than a free cruise. I should bring it up next time I see her.

I ALSO but where would you advertise? Here? Going on a cruise end of September out of Nola anybody rather Pay $200 for my kind of Massage verses the same damn pricing for a regular one?!
Hand out flyers business cards? LOL I am thinking staff would appose.
How About Cruise Thread? Every Provider put cruise dates where when if she is UTR or can be approached. every hobbbier interested in the long term or just an added excursion..
