Eccie ... Kroger has packages of frozen mixed veggies with rice or noodles for 88 cents a package ... others without rice or noodles. You can get 10 pound bags of boneless chicken breasts at Sam's for about $2 a pound that will cover you for 15 to 20 meals, and you can get pork or beef at $2 a pound to add some variety.
Keep all that frozen.... and pull it out when you want it.
Get a large container of olive oil for 15 to 20 bucks ... good for a month.
Put a dab of oil in a small frying pan with water, put in the "meat" frozen, cover with a lid, and after it is on its way to cooking toss on a frozen bag of vegetables. Cover and in 15 to 20 minutes eat. $2 to $3 a meal.
You do not need to be a Julia Child's or Emeril Lagasse to eat!
Simple is good.

E A, try a small roast (not an expensive one) in a Crock Pot. You can put it on when you leave for work, heat on "low", and it will be ready when you get home that evening.
Small beef-roast, salt & pepper, Worchester Sauce, a chopped onion, and a package of those little baby carrots on top. (Oh, and cut up a potato or two if you like and throw it on top as well).
Your home will smell yummy when you get home and you can eat the leftovers for several days!!!
Edit: LexusLover, I like your idea. I'll have to give that a try. I am into quickie meals because I get home kinda late form work most days.

Yes it is winter. Invest in a Crock pot
COWBOY STEW
brown 1 lb. hamburger meat , 1 onion, chopped, season with Salt & pepper then drain. Add 2 cups water and 4 chopped potatoes. Cover and cook until potatoes are tender. Add 1 can tomatoes (undrained), 1 can tomato sauce, 1 can whole kernel corn, 1 (16 ounce) Ranch style beans and 1 or 2 cans of chopped green chilies. Simmer for an hour in the crocker.

LD I always wanted to try something like that, cowboy stew sounds really good.

chicken speg casserole
4)chicken breast sliced in square pieces and cooked in butter
1 pack)noddles cooked
mix them together with 2)cans of cream of chicken, 2)cans of cream of mushroom, 2)small cans of rotel, put it in a oven safe dish, put in oven on 300 for 30 mins then sprinkle alittle cheese on top, stick back in there till cheese melts.....YUM

I make some damn good steak on the George Foreman... that and some shrimp, zucchini and squash cooked on the same grill is one of my favorite things to eat. No more than 30 min from prep to finish if your steak isn't frozen. I can't remember what brand it is but they have different meat and steak seasonings/marinades that come in one convenient little pouch.

Here's something you can do when you're serving for someone special or a group of people. It's too expensive to just eat yourself...or if you just rollin' like that you can. LOL
Gumbo Casserole...
1 pack boneless chicken thighs
1 pack sausage--whatever brand you like
2 cups raw/peeled shrimp
1 small bag frozen okra
1 cup dry rice
1 jar Gumbo mix (have to buy @ HEB in the Cooking Connection area)
Start by cutting up the chicken thighs into smaller pieces, doesn't have to be diced, just nice sized chunks. Cut up the links of sausage. Get a casserole dish and spray with non-stick spray. Line the bottom of the casserole dish with boneless chicken. Season the chicken as needed. Place the cut up sausage on top of the chicken and spread evenly all over the dish. Do the same with the raw/peeled shrimp. Now take the frozen okra and spread evenly as well. Take the cup of rice and spread evenly. Now, take the jar of Gumbo mix and make sure that it gets all over the top of the entire dish. You may need to take a knife or spoon and poke it around to create holes for the mix to get to the bottom.
Place in the oven @ 350 for about 45-mins to an hr to be sure the chicken and rice are both cooked evenly.
Serve it up!

What I do best at the moment is a steak, mashed potatoes, and which ever kind of beans I'm in the mood for.
Steak seasoned with garlic, salt, pepper, wershikshire ( whatever it is lol ) sauce cooked on the grill
Mashed potatoes made by boiling until soft, mashing with a potatoe masher, mixed with salt, pepper, milk, and butter.
Then I tend to like either ranch style beans or pork n beans.
I do this well because it's what mom made as a kid. Her mashed potatoes were my favorite.
