Default Recipes for Singles

Do any of you ladies/fellas have favorite, easy, fast recipes for a single guy like myself that I could try out instead of this eating out all the darn time. I know how to make good steaks, pork chops and couple other things but would like to try other things. Even crock pot stuff would be good.

Thanks in advance for suggestions.

I thought Mila was gonna help me out but I think she forgot about me lol.

Spaghetti. Noodles ,Boil water, simmer sauce. Easy and fast, Becareful though I once dropped my bowl of noodles in my lap and almost burned the main noodle in the process.

Okay it something I learned to do that sounds hard but its really easy. Get 2 Chicken Breast(cover with saran wrap and pound to an inch with a mallet),3 tbsp E.v.Olive Oil,3 pats of butter and melt in a skillet(cast iron if you have it). Saute on med-high heat for about 4-5 minutes per side. While you are cooking that chop about 1/2 c button mushrooms,fresh chopped basil,1/4 c shallots and tbsp garlic(set to the side). Get your fave shredded cheese(I prefer to grate a smoked mozzarella) and take out about a cup and a half. Remove the chicken and saute all veggies(mushrooms,shallots,and garlic) til soft and tender,about 3-5 minutes. reduce heat to med-low and place chicken back in the skillet and sprinkle the cheese evenly around the skillet and simmer. Mmmmm its reallly yummy and kinda rich(not for dieters or weight conscious but im not,lol! It sounds hard but you can buy garlic already minced in a jar,cheese in a bag,and even shallots chopped at Central Market and Whole Foods(thats the lazy way out though). I toast a loaf of french bread drizzled with Olive oil and a green salad. I dont eat this often but its fast and really yummy and taste like it took a long time

Warm spinach and escarole salad:
Sautee sliced onion and crushed garlic in olive oil until onions are cooked
add a little water and greek salad dressing topped with spinach and escarole
cover and let steam on low

Goat cheese chicken
butterfly (i think is the term) chicken breasts stuff with pesto, olive oil and garlic and close. bake and top with spinach, artichoke and goat cheese


Find one day you may have to cook something and make enough for leftovers or one thing you can change up such as . . . .

Bake a whole chicken one day, the next day you have quick chicken salad sandwiches
or take chunks of the chicken and warm it with broth with garlic, soy sauce, salt and pepper and top egg noodles with it. . . both 10 minutes tops!! And the baked chicken may take over an hour but it's easy, at my grocery store for an extra dollar you can get it already made!

Simple meal I sometimes make is chicken and sauteed veggies.

Start with a light amount of olive oil in a pan, toss in some sliced yellow, red and/or orange bell peppers, little of your favorite seasoning, wait till they start to soften. Then add some sliced or cubed chicken pieces, cook till they brown. For seasons I usually use Tony Sachery (sp?) Cajun chicken. For a side, you can sautee some slices of zucchini and yellow squash with a litle olive oil and salt. Takes about 30 min to make and is good for making dates think you know how to cool.
