Default Food Question

I love cucumber and tomato salad. I make it all the time but can't seem to hit a perfect dressing for it. Please help me with some ideas to push the dressing over the top.

My vote would be for basic simplicity.

1/3 white champagne vinegar
2/3 high quality Extra Virgin olive oil
A grind of black pepper and a pinch of salt.

If your tomatoes are good enough, this will be perfect. Add a bit of shredded basil if you must.

here's what i use:

  • 1 large shallot, finely minced
  • 1 tablespoon dijon mustard
  • 1/4 cup balsamic vinegar
  • 3/4 cup olive oil
  • a few grinds from the peppermill
combine shallot, mustard, pepper and balsamic vinegar. using an immersion blender, slowly drizzle in the olive oil.

and i add some basil from my garden if available.

This is what I have found it works great.

Italian dressing, a little balsamic vinegar and coarse
ground Italian seasoning, not powder one, salt and pepper to taste.

Let it set in the fridge overnight and enjoy.
