I used to live just south Of Simi Valley, CA so weekend trip were to Santa Barbara area and both me and my ex like good Champagne so we found a place there called Maison Duetz (now Laetitia) they grew the same grapes as Duetz but in CA soil and weather and they make an outstanding product. We were invited to a vintners dinner there and both the food and the wines were fantastic as no vintner would bring swill to share with their peers. The wines of the area that i like and I am a pinot drinker unless it can't stand up to a crusty slab or KC style ribs or ToyZ adulterated Hooger's baloney sammie then I head for a merlot or a cab.

Wines from Sb area that I like are: Testarossa makes some dame fine pinots as does Wild Horse, fess Parkers has a couple of vineyards that put out great pinots and do a few others like Fetzer and Kendall-Jackson are stepping into the pinot area with some nice offerings.

My favorite from the north coast is Iron Horse they make some dammed good pinots.

I have to go work for an hour and make my $5 a minute, No really I have a service call to run as I don't expect my people to be sober on a Sun afternoon, I take it upon myself to make the Sunday calls, Russian Imperial Stout is my reward afterwards.

That Opus One is selling for $ 3200.- $3500. now

Yah, the first time I had OPUS was at a private party in San Francisco. This guy brought a bottle of '81 (this was 2001 if I remember right). I asked him "Steve, do you know what that is"? He said "Yes, wifey and I got a case of it for our wedding". I was like, ok, make sure I get a full pour (glass). It was great, but, it was worth $1200 at the time. My entire wine collection then was probably worth about that much.

I love the area in and around the Bay. I've (no lie) probably spent 30+ weekends touring Napa and Sonoma wineries as well as others nearby. What we don't realize living here is that the BEST wines are the small lot varitals that they only break open for the crush or in the "good" tasting rooms.

My favorite wineries are (in no particular order)

• Benziger in Sonoma...just make excellent reds. Family run and all organic. You can find a few of their wines here, but the estate wines sold there are just fantastic and in the $50 range
• Stags Leap in NAPA. Maybe my favorite Cab? $50-$75 I shared a bottle with one of our local Hoogars not long ago and she loved it too.
• Coppolas estateshttps://www.francisfordcoppolawinery.c om/ (has gone through many naming convention changes, but the grounds are just magnificent). And the family house "out back" is particularly beautiful. He (Frances Ford Coppola the director and owner) used to have memorabilia on site. The desk from the Godfather, the costumes from Dracula, the car from Tucker. Was a really cool tour. But most of their wines are mass produced shit...except for their top of the line "Rubicon". But it sells for about $150 a bottle so not one I frequent.
• David Bruce-love the Pinot, love the area
• V Sattui in NAPA. Great wines (particularly in their Vintage tasting room) great grounds, general store, picnic area. One of the most fun visits in wine country.

I stick with my bacon fat for roux. Don't knock it 'til you tried it. The moisture shouldn't be an issue if you separated it after refrigeration or better yet; buy better bacon or try Ganny's old fashioned bacon drippings.http://twinfoods.com/
I have used oils but if I am short on bacon fat; I add chicken drippings. I'm leaning towards thinking some might like it better in chicken dishes anyway. Using animal fat may toss out a few cajun napalm bombs so be prepared long sleeves, pants not shorts, and shoes not sandals. I think once you try it you will never use oil until you have to. P.S. It cooks faster too.

That is the end of my Ho's cooking lesson for tonight. Time to break out the apple smoked ghost pepper salsa and go to the local pub and enjoy a couple of Hop Slams. know you probably can't get a bottle but we have it on tap. Being in Indiana (eastern mid-west) sucks in the winter but there is one of the best beer bars in the country within blocks on my loft.

And I'm going to respond that I have actually been to their winery probably 10 times (its worth a visit because of the grounds and tour) and still contend its shit for wine. And certainly contend that at the price point there are many other options that I would recommend first.

I base my opinion off of actually drinking it, not a wine review which is possibly influenced by funding. But one mans ATF is another mans skank..same in wine as it is with Hoogars
