Default crawfish

In Texas, crawfish usually come into season beginning in April through late August, depending on the weather and whether there's enough water where they are raised. Any of the stuff you find now, like the frozen tails, is probably from China. Honorary Cajun here who cooks several hundred pounds of crawfish a year! Nobody's mentioned the cold beer to wash them down!

Ma Harper's place...... the woman is older than old and still cooks up most of the dishes....Ma is a hoot to talk to also... I'm not sure of crawfish on the menu but high probability she cooks them....

There was a place on FM306 near 281 called The Boiling Pot that would cook up the Crawfish, Potatoes and corn and drop it on your table and keep it coming as you asked for it. Was pretty darn good. Quite a drive for crawfish though. Haven't been there in a long time. Not sure it's still there.

crawfish should start to show up around the end of January to the beginning of February. Willie's Ice House is a good place. I have a connection to them live and the full set up to do a boil (I'm from Louisiana) if anyone would like to host a boil I will cook 'em and bring some cold beer.
