Based on my (albeit limited) experience; I think the biggest difference is in how things are measured.
As a client I see I am buying X amount of time to do whatever I want (that is of mutual concent) be that dinner, drinks, a bubble bath, sex, or ideally some combination there of. I feel most escorts see things the same way.
Others see it as I am buying 1 orgasm, and as a client I should know my body well enough to know how long that will take and purchase the correct amount of time. (after all it's not her fault if I over spend, right?)
The issue arises is when you don't learn that you have contracted with the second type until you are in the moment. Most of us clients and escorts alike don't like to discuss too many of the mechanical details beforehand for a multitude of reasons so some times it is hard to place blame when such things happen.
