Love it. Much more tender compared to beef.

My friend from Houston that I worked with has a ranch between Dallas and Houston and those wild hogs are out of control. He would always invite all the crew to come out help exterminat them.
They are dangerous and not very attractive with God awful toes.
Just horrible.

Have to shoot them.
And, they can break out of traps/cages.
If a few are missed, the pack breeds back quickly
A litter every 6 or 7 months and 4 to 8 piglets a litter.
Your friends use of the word "exterminate" is correct.

Much worse than our coyote issues, even though we lost a few head of cattle our 1st year.
Coyotes will also drop 4 to 8 pups a litter, but just once a year.
Long rifle simply works quite well on Kansas plains. But just can't do that for critters in Texas underbrush.

Default Coyote

Coyote in a Crock pot:
2-4 lbs of coyote meat
16 oz of apricot preserves
1 bottle BBQ sauce
1/2 purple onion diced
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
Throw it all in a crock pot and let it cook for 8 hours.

Howlin' Coyote Stew
1/2 cup uncooked lentils
2 large or 4 small potatoes - well scrubbed, but not peeled
2 good sized carrots, quartered lengthwise and cut into 3/4" slices
2 good sized stalks of celery, chopped
1 tsp whole fennel seeds 2 cloves finely chopped garlic, more if you like
2 cups low sodium tomato juice
2 cups water or veg broth
1 tablespoon chili powder, more if you like
1 healthy pinch crushed red pepper
1/2 tsp basil
1/2 tsp oregano
Dump all ingredients in pressure cooker. Bring to high pressure. Cook 8 minutes. Let pressure release naturally. Add salt to taste
If it's too thick, add some water or veg broth.

Chili powder and red pepper = howling

Any recipes for well aged nanny goats?
The ones whose udders are dragging the ground and dried up?
I've heard the meat is tough and gamey!
For true cabrito recipes most like younger and freasher

Take your nanny goat to a Beverly Hills plastic surgeon and get some perky ones.
