Agree with some of you.

You have to get out of the bid city away from the restaurants that mass produce. The places in Lulling, Lockhart, Halletsville or other cities. Get back to the KC's cooking for the local Catholic Church. The guys that have done it all their life and well as their fathers and grand fathers. But I will have to say that the Goode BBQ in Houston is really good.

Rudy's..... The best brisket at any place is the "top cut". Some call it the marbled part or moist part or just FAT part. Brisket has TWO parts, as most know (I guess). The bigger piece has no fat and is very DRY. The smaller part has a lotta fat and the fat, as with any cut of meat, is where the flavor is. The absolute best BBQ will be found at a "Polish Wedding" or a church picnic in S TX such as Falls City, Kousciusko (sp) Cestahowa, Panna Maria etc. etc.

Now in all my experience eating bar-b-q. Does anyplace serve cornbread? I've never seen a BBQ restaurant that did.

Considering my dad's side of the family is from Karnes City I completely agree with you in fact every summer we used to go to visit them several times a month usually on Sunday's and Grandpa was always going to one of the church picnics to pick up bbq. Which is why I love snoga's BBQ they cater a lot of those polish weddings in fact I think they even get there sausage from Dziuk's meat market (or at least they used to). We pollocks don't know much but we do know our BBQ LOL!

Texas Roadhouse really isn't BBQ :/ they are more of a steakhouse. Being Texas born and bread I must say there is a difference between a BBQ place and a steak house. The only things they have that are bbq is bbq chicken and they put sauce on their ribs. They center around steaks though. I only know because I worked there for quite some time in my younger years. I will say they are one of the best chain steak houses ever. They truly make everything from scratch all the way down to their ranch and their steaks are melt in your mouth good.

I am VERY glad you posted this thread GFX only being down here since February and being a huge foodie I LOVE hearing about all the great places to eat down here that I don't know about.

Bet you looked good in the outfits the girls at Texas Roadhouse wear. They do know how to cook a steak.

Their baby back ribs are normally good.

Closest to SA the best are Cal-Bob's and Buzzie's in Kerrville; of course, there are the traditional "bests" in Luling (Luling City Market) and Lockhart (Black's, Smitty's, Kreuz Market).
