I rarely use hollandaise sauce, but if you follow this recipe from Master Chef Tyler Florence, carefully, you can't go wrong. It's always better to avoid the problem in the first place.

There are several methods of saving a broken hollandaise, I don't have the time to sit and give instructions for those who are not paying me to do so. Can you really restore a broken hollandaise sauce? I'd like to know how to do that. I don't really break sauces any more, but when I do, pretty much I throw it away and go out LOL.

I put too much vinegar in a Bearnaise sauce once and used nearly the entire dozen eggs fixing it. Needless to say I'll never make THAT mistake again LOL.
