Yeah, perhaps it was shortsided of me but when I started this thread it never occured to me that my search for a good taco would lead to a multipage rant about Mexicans. Especially since you don't HAVE to be a mexican to scramble an egg, add some meat and cheese, and wrap it up in a tortilla. Good to know on the Asiain places, any specific ones you'd suggest?

Nevertheless:

Mexicans. You'll find 'em where the tacos are!

As long as the culinary question is being diverted from the original I should add that are much nicer Indian restaurants in Katy now than when I first moved here 5 years ago. Not quite as nice as in Houston but very good anyway.
And there are a few of my favorite - Middle Eastern - but those are clearly not as good as can be found elsewhere.
I am curious about the answer to Asian too (I am assuming that tbone did not include Indian when he said Asian). I have seen many decent Asian places but I would not consider them to be as good as Chinatown.

My favorite ethnic food of all is Greek, There is one Greek restaurant on Mason but it is not very good. Still there are many other good places.

I am also looking for a good Thai restaurant on mason or Fry are close by.

I don't recall any Greek restaurants on Mason. While it is not my favorite I do like Greek (food I mean )
There are a few Thai on Mason but none that I consider outstanding.

The Shiskabob Cafe on Fry Rd (next to Target) is pretty good. It's more of a lunch place.

Yes, that is Persian food and it is pretty good. I know Arshieh at the counter pretty well. Similar but still distinct from Arab food. There is another Shishkabob on Hwy 6 but for some reason I don't find it quite as good.
