I have mostly lost faith in what any reporter has to say. They seldom go into any depth. Most of them have little education outside of their own job of putting words down on paper without any understanding of the subject.
Wow, the reporter was NATIONAL. SO WHAT! There is no excuse for a reporter to make up a story with little facts: many do, so we must keep a little doubt when we read what anyone writes today. Look up some cooking history, man as been cooking over an open fire long before the beginning of what is referred to as the "deep south". What would you call the cooking over wood fire by a Neanderthal? He probably thought it was really good cooking, whatever he called it.
We can always improve or cooking, or just make changes and see how they come out and call it whatever we want.
One likes what one likes. No one can dictate his personal likes or dislikes to others. To claim that yours is better than mine is like an insult with a smile. Quite frankly, I like every type of cooking. What you like or dislike, does not matter to the discussion. For example, a lot of people like the hot taste very much, others not. But the demand for good food is everywhere.
Kansas City or Texas: I like all types both types of meat.
