Default Blue Goose

Nothing beats a blue goose gumbo (with trinity) and plenty of blue and snow goose gizzards. Maybe a touch of tasso but only a hint, otherwise it masks the goodness of the goose and gizzards.

I make a seafood gumbo with shrimp, crab, and oysters. I make it thin-less roux than some do. I use bay leaves and sometimes some chopped Tabasco peppers. I leave the filé to add at the table. Chicken and sausage gumbo gets a can of okra and maybe Ro-Tel tomatoes if I really feel like it.
