Get an inflatable kayak. West Marine and REI both carry quality brands.

Be sure to get a good compressor.

Kayaks are fun, you will notice a lot of things you miss in a boat. I'm thinking of getting one to fish after work, It's easier to deal with. Cold Pass, the Southern shores of Christmas and Drum Bay are holding big numbers of trout right now. Of course East Galveston and Matagorda are always good. If you get one hit me up, I will pm you a map with some spots, just don't show anyone else.

I have only used one a few times, fishing with a friend who has a pair of them.
The only problem I had is that it can be hard to land bigger fish. It is hard to twist around if they run behind you. Areas with a lot of boat traffic can also be annoying, large wakes aren't much fun. Some boaters can be assholes. Maybe not so much with a pretty lady out fishing.

I would go into the bays there are places you can go that boats can't get to so you wouldn't have to worry about that...Does the kayak rock ? Like when you caught a big fish or was it just a pain in general?

I got a buddy that is a kayak fishing guide and the times I've been I've never seen one flip over. But I have heard about dumbasses that are inexperienced standing up in one and falling over in it. They are actually pretty sturdy. I am not an experienced fisherman let alone in a kayak but watching a couple that are experienced fishing out of one can be easy.
