I also have several screenshots of me texting this very same number asking for the car to be returned but no response.

I trust that your Ex reported the car stolen, so that she, as the Registered Owner, is not responsible for any damage or crimes that these perps commit. (Technically, because the keys were handed to them, this is “unauthorized use of a vehicle”, which is a felony in Texas). On that note, if you eventually find her car in some motel parking lot, don't take possession...call the police with the location. That creates the legal record of when she again possesses the vehicle.
