Texas Pride in St. Hedwig can usually satisfy my needs.

And I remember when Luling and Lockhart were "it" several decades back.

Also Elgin and several other small towns thrived. Austin at the time had not yet discovered the allure of 'cue.

Then again, those of use with European tastes would frequent the state's best small town restaurant the "Bon Ton," which gave us a cover story excuse to be in La Grange.

Ms. Milani, those are Pig Shots. Not a creation of mine, and they are a bit time consuming to make, but they are delicious. You take a large link is sausage and cut it into about half inch disks. You then take half a slice of thick bacon and wrap it around the sausage disk forming a cup. Use a toothpick so it stays wrapped.

The filling is only limited by your imagination. Typically, it starts with cream cheese, cheddar cheese, a little sour cream to thin it out slightly, and some rub. I did one where I added a salad shrimp on the bottom of the cup, and another on top.

Those in the photo, I added pulled pork to the filling. I mixed the cheese mixture and the pork, then put it into a piping bag, or a ziploc bag with one corner cut off. Pipe the filling into the "cups", not too full as they rise, and then smoke them until the bacon just starts turning crisp. As a decorative touch and to add an additional bite, I dotted the top of each with Stubb's Spicy BBQ Sauce.

I've had friends try to eat them politely by taking little bites of them, but the proper technique is to put the whole thing in your mouth and chew. Then you get the combination of flavors from the bacon, the sausage, the pork, the cheeses, the rub, and the drop of sauce. They are heavenly. And very rich...

CashmereLove I've made them before. Pretty straight forward to make but need small to medium onions otherwise bacon doesn't cover. Can usually get 2 from medium onion.

Just have not found a consistently good BBQ joint here in SA...and although they somehow manage to get good marks...Two Bro's has been horrible the few times that I tried them....I get that the owner is some celebrity chef but his BBQ skills are not there. Snows BBQ in Lexington,Kreuz in Lockhart, Franklins in Austin, Salt lick they all deserve the praise that they get....just saying
