I agree it is in our nature, as Pittsburghers, to take threads off track. I love it when threads get off track and controversial...it brings a smile to my face, I admit. I feel we thrive on it even though many bitch about. It’s amazing how many Pittsburgh threads have the inevitable mod comment of “keep on track” and a collective “WAH-wah” Debbie Downer moment occurs. Maybe it’s our adhd...who knows. I do know this...people don’t change and I doubt the comments here will change either. Fine by me.

I do.

2 lbs Ground meat
2 cloves garlic finely minced ( I really like garlic )
1 can diced tomatoes
Breadcrumbs ( I use unseasoned )
Brown gravy mix
1 finely chopped Vidalia onion
Mushrooms if you like them chopped up of course.

Mix the meat, egg, breadcrumbs, gravy mix, onions, eggs, garlic and mushrooms up
Spoon out half the tomatoes from the can and mix into the mess.
Shape and place into a greased loaf pan ( I use butter )

Bake at 375 until temperature reads about 130.
Pour the rest of the tomatoes on top and return to the oven until it reaches proper temperature. (150-160)

It's ready.

1 turkey
1 large onion

Salt

Thaw the turkey
Cut out the backbone and splay the turkey out flattening it like a sunbather.
Cut the onion into slices and line the bottom of the roasting pan with them.
Soften the butter and give Mr Turkey a massage being sure to smear some under the breast skin.
Salt the whole turkey.

Cover and put into the oven at 385°
When the bird reaches a temperature of 135-140 take the cover off and roast until nicely browned and crispy.

PS
Salt can be deleted if one is low sodium.

The onion steams, moistens and tenderizes the bird.
One can just stab the heck out of the onion and stuff it into the uncut bird for a moister more tender bird but splaying it gives more heat exposure to the meat and a crispier bird.

Wet brine for 24hrs, inject with Cajun butter, season to taste. Stuff the cavity with apples, carrots, onions. Put it on a smoker till the breasts reach 165 internal temperature.
