Gates and Bryants are two of the oldest BBQ places in KC and their sauce reflects that. It has more spice and vinegar in it. Ever since KC Masterpiece hit the market, everyone thinks we a a sweet tomato based sauce type of town. To me a good BBQ sauce needs enough spice to make your lips tingle.

Me, I prefer Gates, LC's or Byants in that order. Gates for a beef and a half, LC's for ribs and Bryants for burnt ends and have cooked fries.

Worst BBQ I ever had was in the Carolinas, a mustard based sauced. To me it was gross, but the locals love it.

So for those who have responded so far, I have a question. Rather than have a multitude of threads on bbq in KC, would it be nice to have a "sticky" thread with the best and worse places that rub their meat daily with fine or yuckky sauce each day at the top of the sandbox?

Just curious... Are you talking about Hayward's? Haven't heard of Heywood's...

If so, I'm not a fan... though I thought it was good YEARS ago, and possibly it has made a comeback. But if it's a new place, where is it?

One of the big things about any bbq is the process of the oven itself. It has to temper out and that can take a while, or so I have been told. When Arthur Bryants went into the Legend's it was awful....it had not been going long enough for the flavor to reach its max. Well that is what I have been told any way. Any experts out there willing to share. I did photos at the American Royal Contest a few years back and learned a lot. It is a science from what I learned as the mobile crews can in by the ton!

So any BBQ experts can to help on this one? Location, seasoning, sauces, what makes it great and average? Do the taste buds make a difference too? Any more add ins on outfits? What any one enjoy - enter in BBQ contest sponsored by the KC Eccie crew? Maybe the ladies would "volunteer" to be prizes???

Yes, I'm sorry...Haywards is what I meant. I haven't eaten there in a couple of years, so maybe it has gone downhill, but it was excellent before that.
