Gumbo Casserole...

1 pack boneless chicken thighs
1 pack sausage--whatever brand you like
2 cups raw/peeled shrimp
1 small bag frozen okra
1 cup dry rice
1 jar Gumbo mix (have to buy @ HEB in the Cooking Connection area)

Start by cutting up the chicken thighs into smaller pieces, doesn't have to be diced, just nice sized chunks. Cut up the links of sausage. Get a casserole dish and spray with non-stick spray. Line the bottom of the casserole dish with boneless chicken. Season the chicken as needed. Place the cut up sausage on top of the chicken and spread evenly all over the dish. Do the same with the raw/peeled shrimp. Now take the frozen okra and spread evenly as well. Take the cup of rice and spread evenly. Now, take the jar of Gumbo mix and make sure that it gets all over the top of the entire dish. You may need to take a knife or spoon and poke it around to create holes for the mix to get to the bottom.

Place in the oven @ 350 for about 45-mins to an hr to be sure the chicken and rice are both cooked evenly.

Serve it up!

Had to jump in on this one.........If it has anything to do with a "JAR"........It really isn't GUMBO............You got to make that rouge from scratch.........come on now..........lol

steaming works fast ... with good tight lid....and a good investment...... and

steaming doesn't "wash" away so many of the vitamins/minerals, but "drips" away the fat.
