No longer doing the Pirate Show......Treasure Island is no longer called Treasure Island now, just called TI and is no longer a family ordeal casino but changed to a complete young contemporary look hotel and casino.
Suggestions:
Blue Man Group (Venetian Hotel) Unquie in its on way, play a mixture of idiosyncratic, often percussive, instruments. Outstanding show and very entertaining.
New new hotel (Aria) at City Center is great for young adults, as well as Planet Hollywood and Hard Rock Hotel.
Phantom of the Opera (Venetian Hotel) Second best show of the Phantom of the Opera next to New York
Ka' by Cirque du Soleil (MGM Grand) Best stage in the world and once you see it you will understand, the stage alone cost $220 Million to build.

I agree with this 100% Redrock is one of my favorite places near Vegas. I would guess I have been there at least 50 times.

Bonnie Springs Ranch is just a few minutes further on after Redrock loop road. It, at least at one time, was a decent place for lunch, but that was several years ago so I don't know the current status. They did have a very good hamburger.

For atmosphere, Bartolotta at the Wynn is excellent food, and there are very romantic tables by the "Lake of Dreams" (try the scallops appetizer- honestly the best in Vegas). Picasso at Bellagio is also very intimate and romantic. The view from Prime at Bellagio is also gorgeous- overlooks the fountains. For lunch, try Mon Ami Gabi at Paris- you can get a nice table on the veranda overlooking the strip and people walking by. The Eiffel Tower at Paris and Alize at the Palms have the BEST souffle in Vegas. Daniel Boulud at the Wynn also has a great view of the Lake of Dreams and great food (try the lox appetizer), but isn't as romantic or intimate. For a special treat, there is always Joel Robuchon at MGM.
For a great view at night, try Mix at the top of THE Hotel. It is free entry before 10pm.
Stay away from the Top of the World restaurant at the Stratosphere- it's awful! As a matter of fact, avoid the Stratosphere altogether if you can- it's gone really downhill. (And Bite, according to my friends, is pretty cheesy.)

My favorite shows in Vegas are Love and Zumanity- both by Cirque de Soleil. For Love, the further back and up you sit (above the middle, but not all the way at the top), the better the experience (be sure to watch the walls). You can also get half-price tickets for some of the other shows and some buffets from the Fashion Show Mall.
A great place for breakfast is the 24-hour cafe at the Wynn, you can get a table by the pool. Another wonderful breakfast option is Bouchon at the Venezia Tower. A great place for lunch besides Mon Ami is The Verandah at the Four Seasons- and sit outside near the pool. Great atmosphere, great food.
There are great couples massage options at the Canyon Ranch Spa at the Venetian. There is one where you go into a cave-like thing and rub creams and scrubs all over each other- can be very erotic

If I read you correctly you will like Pure at Caesars Palace and Trysts at Winn for Night Clubs, there are tons of things to do besides gambling.
New Hotel at Center Center (Aria) along with Planet Hollywood, Hard Rock is based on young adults like you....
