Locals things: First Friday (not like it used to be), movie or a drum circle at the container park east of downtown (or pretty much anything east of LV Blvd close to downtown), there's an interesting new venue called the Space, I recall some monthly magic event north of Henderson/Green Valley area, I was a fan of the Saturday Night food trucks and related events at Tommy Rockers but I don't think those happen these days, plenty of great restaurants off strip like Lotus of Siam and Raku that have great reps (recently had a good meal at Pier215), gambling odds are usually better off strip, Smith Center and Cabaret Jazz have interesting shows/events, Nevada Days at Lonnie's (if he'll continue doing them, Nevada Day=Oct 31), being a degenerate sports bettor with the various mobile apps, various festivals (San Genaro and whatever the Greek one is) and concerts at the Desert Breeze Skate Park.
Some typical outdoory stuff like hiking/water at Lake Mead, Red Rock, Valley of Fire, Mount Charleston (not sure if it's still called LV Snow & Ski up there in the winter months), Lake Havasu (you can rent boats and ATVs through some of the tour companies). Hard hat tour of Hoover Dam. That glass platform over west Grand Canyon or anything else there (heli tour, camping). If the zipline thing downtown isn't long enough, there's a decent one in Bootleg Canyon near Boulder City.
Just remember that it's a desert, it can getting super hot in sunlight and can get cold at night. Stay hydrated and out of the sun.
Renting a car helps make all these things easier. Uber/Lyft can make some one off thing happen for you reasonably.
