The longer you keep a steak by a source of heat, the worse it gets.

Cold in the middle, seared on the outside. If the steak is brown more than 1/8" in, it's overcooked.

I have never, not once, sent a steak back for being under cooked. Lots have gone in the garbage for being cooked into shoe leather, though.

And getting a nice BJ after makes it a perfect meal.
