And, look, when it comes to how an escort defines her limits, and what she chooses to do or not do and with whom -- at the end of the day, my belief in personal bodily integrity trumps all else, and I don't believe (obviously not a legal matter, but nor do I believe as a matter of principle) that an escort is a "common carrier" to whom the civil rights laws apply.

You're certainly free to have a "no blacks" or "no Hispanics" or "no Irish" or "no bisexual men" policy, and that's obviously entirely your prerogative. But that said, it's equally my prerogative to conclude that you're a racist (in the former cases) or a homophobe (in the latter)...

Curious Cat, I can see both sides of this. Gay rights is my biggest issue, so please do not assume that I am homophobic in any way. I can see your side for obvious reasons, but I can also see her side because:

1) In the game of odds, bisexual men (as a group) are far more likely to have HIV than straight men.
2) His mention of his bisexuality could be considered inappropriate because sexual topics are best not mentioned during initial contact.

I am playing devil's advocate here. In other words, I am not sure of her reasoning, but I'm also not quick to judge without further information.
